PRIVATE BRAND  PEPPERMINT CANDY COOKIES

1 ¼ sticks of butter 1 cup brown sugar
2 eggs ¼ cup oatmeal
2 cups flour 1 tsp baking soda
1 drop of red
   food coloring
1 – 2 cups crushed
   peppermint candy
 ¼ cup powdered sugar 2-4 tbsp milk
1 tsp salt

 

In a medium bowl cream softened butter and brown sugar until light and fluffy then add the eggs and blend well.

Shift the flour, baking soda and salt together and slowly add to butter mixture.

Fold in the oatmeal, then peppermint candy.  At this time you can refrigerate the cookie batter for 30 minutes, this will make it easier to form into balls before baking.

Form into 1” balls and place on a well greased cookie sheet at 350˚ for 8-10 minutes.

Cool completely before glazing.
